Pumpkin Cream Cheese Cupcakes


I made these today- they are pumpkin cupcakes with a cream cheese filling. The top of the cupcake has orange buttercream frosting with a white chocolate leaf accent on it. I was wanting to make a fall cupcake since I am getting in the autumn season mood and these turned out delicious!

Gorgonzola Chicken Tacos

Gorgonzola Chicken Tacos- 






Ingredients:

- 1 lb. chicken breast
- 28oz can of stewed tomatoes
- 1/8 fresh garlic clove chopped
- 1/8 cup chopped white onion
- 1/4 cup chopped green pepper
- 12 flour tortillas (or taco shells)
- 1/4 cup sour cream
- 1/4 cup gorgonzola cheese
- oven bag

Optional:
- shredded cheese
- salsa
- lettuce
- tomato
- cilantro
- taco hot sauce

1). Preheat oven to 350 degrees
2). Place chicken in the oven bag
3). On the stove, simmer stewed tomatoes, garlic, onion, and peppers together for 15 minutes
4). Pour the sauce over the chicken in the oven bag and close tightly, leaving slits on the top of the oven bag for steam to escape.
5). Place the oven bag in the oven for 30 minutes until chicken is cooked thoroughly
6). Toast tortillas or taco shells in the oven for 3 minutes to crisp
7). Take the chicken out of the oven bag and cut into small pieces
8). Put chicken onto toasted flour tortillas or taco shells, add desired toppings

The stewed tomatoes, veggies, and garlic cook into the chicken while in the oven bag and actually give it a juicy and tender consistency as well as an authentic Mexican flavor.

Gorgonzola has a blue cheese flavor to it, so if you're not a fan of strong flavored cheeses, try cheddar or feta instead for a less potent taste

Burger Minis

Burger Minis-

-1 lb. ground beef
-2 packages of crescent rolls
- 1/2 tablespoon bbq rub
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1 teaspoon Dale's seasoning
- Cheddar cheese (optional)
- Lettuce, onion, tomato, pickle, relish, mustard, and ketchup (optional)

1). Preheat oven to 350 degrees
2). Roll out the crescent dough and make 40 circles
3). Place circled crescent dough and cook in the oven for 8-10 minutes until done
4). In a mixing bowl, knead together ground beef, bbq rub, salt, dale's seasoning, and garlic power. Form into 20 round patties
5). At 350 degrees on the grill (you may also pan cook on medium high heat) cook burger patties until desired wellness
6). Add cheese if desired onto burger the last couple minutes of cooking to melt.
7). When the burger is cooked to your liking, place each one between two of the done crescent rolls and add your desired toppings!

Cake Decorating Classes- Hobby Lobby

At Hobby Lobby this month there are cake decorating classes with Mary Todd every Tuesday and Thursday @ 6pm!

Pepperoni Red Pepper Pizza


Pepperoni and Red Pepper Pizza-

-Pizza crust (I just used Boboli whole wheat crust)
- 1/2 cup pizza sauce (I used Ragu Light tomato and basil)
- 1/4 cup mozzarella cheese
- 1/4 cup cheddar cheese
- Cut sweet red bell peppers (into circles slices)
- Pepperoni

1). Pre-bake pizza crust in the oven for 5 minutes on 400 degrees
2). On the stove heat pizza sauce and add garlic powder, Italian seasoning, crushed red pepper, and fresh ground black pepper. Stir together.
3). Take crust out of the oven and spread pizza sauce, then add 1/8cup of each cheese. Add pepperoni then sliced red bell peppers. Last, add the rest of the cheese.
4). Put pizza back in the oven and cook for 10-15 minutes, depending on how crispy you want the crust. Enjoy!

---> I added a fresh spinach salad to go with my pizza.

Cinnamon Rolls:

- Package of Crescent rolls
- 2 tablespoons of cinnamon sugar
- 1/2c powdered sugar
- 2 tablespoons milk

1). Unroll crescent rolls and sprinkle cinnamon sugar on the top. Re-roll
2). Cut crescent roll into 10 slices.
3). Place the slices on a baking sheet and bake at 350 degrees for 10 minutes
4). Mix the powdered sugar and milk together until smooth and pour mixture over the cinnamon rolls for a perfect light combination. You can, also, put icing on the cinnamon rolls instead of the powdered sugar mixture for a more sweet and heavy treat.

Molasses Barbecue Chicken



Molasses Barbecue Chicken-
- 4 boneless skinless chicken breasts

Barbecue sauce:
- 1 cup barbecue sauce (I used Kraft original)
- 2 tablespoons molasses
- 2 tablespoons blackberry jam (I used Smuckers reduced sugar)
- 1 tablespoon balsamic vinaigrette

1). Mix together all ingredients for sauce and pour over chicken breasts in a large plastic bag.
2). Shake the chicken in the bag so all pieces are coated and put in the fridge to marinade for an hour or more. The longer it marinades, the more the sauce will flavor the meat.
3). Cook the chicken on the grill around 350 degrees until the chicken is thoroughly cooked  (10-15 minutes)
You can also pan fry the chicken in a skillet on medium high heat (about 5 minutes on each side) in a tablespoon of olive oil.

Rosemary potatoes-


-6 small red potatoes
- 2 tablespoons olive oil
- 1/2 tablespoon of fresh or dried rosemary
- 1/2 teaspoon salt
- 1 teaspoon garlic powder or garlic salt

1). Cut potatoes into small wedges (about 10 pieces per potato)
2). Place potato pieces into a plastic bag, add olive oil and spices. Shake until well coated.
3). Place potatoes on a baking sheet and cook in the over for 20-30 minutes on 350 degrees until crispy.

I paired the Molasses Barbecue Chicken with Rosemary Potatoes and Green Giant steamed broccoli and carrots in an Italian dressing. Delicious!
